Culinary Demonstration and Awards Ceremony

On Thursday I was lucky enough to be able to attend the U.S. Army Europe 2010 Culinary Arts Team Culinary Demonstration and Awards Ceremony here in Heidelberg. This is not a huge stretch, as my husband was covering the event for USAREUR Public Affairs. He had previously told the people in his office that I like to take photographs of food and asked if I could accompany him. On Thursday morning I dropped off Mikey with a friend and headed out there.

The chefs were pretty amazing and I fell in love with the field kitchen that they cooked in, it certainly made my little rental kitchen feel just a little inadequate. What I wouldn’t give for a kitchen with that much amazing equipment. The chefs won 22 gold medals, it was also the first time since 1992 that USAREUR has won the Installation Command Event.

They served up a wonderful meal for General Ham and guests, I was lucky enough to be able to sample some of the food and it really was fantastic. My husband has already asked someone in charge for the recipes, he enjoyed it too. I hope to be able to share it with you once we receive it and I managed to cut it down from serving 50 people to just 2! Here is the menu –

Appetizer:

Seared Salmon on a bed of Tagliatelle Vegetables served with a Citrus Wine cream Sauce and Tomatoes Concasse.

Entree:

Herb Pork Tenderloin Crepinette and Braised pork Belly with Savoy Cremini Mushroom Bread Pudding and Carrot and Ginger Puree served with Pearl Onions and Peas, Creamed Savoy Cabbage and Natural Jus-lie.

Dessert:

Streusel Baked Apple with Mascarpone Cream Filling Pistachio Sponge Cake with Raspberry Cream and Chocolate Decor served with Warm Apples and Raspberries in Vanilla Syrup with Lemon Foam and Vanilla and Chocolate Twill Decor.

Sounds amazing doesn’t it? Let me say it WAS amazing and it was wonderful to have the opportunity to be able to watch the chefs at work. Unfortunately the lighting for photos left little to be desired, but I tried my best! Here are the main photos of each course.

Oh and in case you’re interested, the coffee table I’m building is in the process of being put together. I hope to have it finished this weekend. Also the bookshelf I’m making from an old wooden pallet has been stained, is sitting in my kitchen just waiting for shelf bottoms. That’s why I haven’t been posting so much these past few weeks, so busy!

    • The salmon one was probably my favourite actually. The Lemon and Wine cream sauce they had with it was DIVINE, the husband was raving about it for ages!

      You’re very lucky to have all that Salmon! We’re basically landlocked here in the Southern part of Germany, so fish is kind of expensive. I would totally eat Salmon every day if I could!

    • You should try to get to see one! We had so much fun, I’ve never been in a kitchen like that before… so hectic! But loved watching the different courses slowly come together.

    • Thank you! Well I tried to fix the lighting in the photos as much as I could, but I was either outside which was the too-bright midday sun or inside with halogen lighting which makes everything look orange! Seriously need to sort out a more reliable lighting kit for myself!

      I totally can’t wait to finish this coffee table, the wood has been hanging around FOREVER. It’s driving me crazy!
